Here we go! My first official use of the InstantPot. I decided to make one of my favorite things, so I would still eat if anything went disastrously wrong.
Ingredients:
1 Pound of Ground Beef
1 Can Diced Tomatoes
1 Small Can Tomato Paste
1 Can of Black Beans
2 Cans Pinto Beans
1/2 White Onion
1 1/2 cups mixed peppers
1/2 Tablespoon Cumin
1/2 Tablespoon Chili Powder
1/2 Tablespoon Oregano
1 Tablespoon Minced Garlic
1 Tablespoon Sugar
Salt and Pepper
The great thing I love about the InstantPot is you can saute up all your meat and veggies in the same appliance. So, I started with the beef and then added the onions, peppers and minced garlic. I also make sure to add the spices at this point to help them bloom.
Then, I toss in all the cans of stuff and turned the InstantPot onto Simmer again to warm everything up before flipping it on to Slow Cook. Towards the end, I mix in a slurry of flour and corn starch to help thicken it up a bit. If you want to avoid that step, I have also used my immersion blender to quickly blend a small portion of the chili which thickens it up.
