Because we are eating lots of protein, sometimes a hamburger patty hits the spot for dinner. However, you can eat those all the time and be healthy. So, since we both love ground chicken so much, I decided to try my hand at making a ground chicken patty perfect for eating on its own. I used about a pound of ground chicken to make 4 patties. I decided to bake them on a cookie sheet lined with parchment paper.
Preheat over to 400 degrees.
In a small frying pan, take one stalk of celery and 1/2 cup white one. Mince them both very well and soften them with some oil for a few minutes then add in some minced garlic. Once that cooks down a bit, set aside to cool before adding it into the mixture. It’s okay if there is still a little oil in the pan as that fat will help bind the patties.
1 lb Ground Chicken
1 Egg
1/4 cup half and half
1/2 cup bread crumbs
Salt and Pepper
Crushed Red Pepper Flakes
1 Tablespoon Dried Oregano
1 Tablespoon Dried Parsley
Celery, Onion and Garlic Mixture
The mixture is going to be a little wet once you mix everything together. Letting it sit a few minutes will allow the bread crumbs to soak up some moisture. Make into four patties and place on a lined cooking sheet. For extra crunch, save some breadcrumbs to sprinkle on both sides of the patty before cooking. The key is to cook them high and quick. I did turn them over toward the end. In total, it took about 12 – 15 minutes but always use a thermometer to make sure your meat is fully cooked.
